Scalloped Carrots
4 c sliced carrots, cooked
1 medium onion, chopped
1 1/2 tbsp melted butter
1 can cream of mushroom soup
salt and pepper to taste
1/2 c crumbled Velveeta cheese
3 c seasoned croutons
melted butter
Preheat oven to 350. Combine carrots, onion, butter, soup, salt, pepper and cheese in bowl; mix well. Spoon into casserole. Toast croutons in melted butter in skillet, toss. Sprinkle over casserole. Bake for 30 mintues. May vary by substituting 2 c green beans for half the carrots.
