Easy Stuffed Flounder
This recipe is also easy on a a gas grill. Line grill with foil first.
2 - 12 in whole flounder
1 pkg stuffing mix
1/2 c chopped onion
1/2 c chopped celery
2 tbsp melted butter
1/2 c chopped crab meat or shrimp
2 slices bacon
salt and pepper to taste
Preheat broiler. Slit dark side of flounder to create a pocket for stuffing. Place on broiler pan sprayed with nonstick cooking spray. Prepare stuffing mix using package directions (stove top stuffing mix is best.) Saute onion and celery in butter in skillet. Stir into stuffing. Add crab meat; mix well. Stuff into flounder. Top with bacon. Season with salt and pepper. Broil for 20-30 minutes or until fish flakes easily. Serves 4.
