Vegetable Rice Pilaf
1/2 c uncooked long grain rice
2 tbsp finely chopped onion
2 tbsp butter
1 1/2 c frozen mixed vegetables, thawed
1 1/3 c water
2 tsp instant chicken bouillon
Saute rice and onion in butter in 2 qt saucepan for 5 to 10 minutes or until rice is light brown. Add vegetables, water and bouillon; mix well. Bring to a boil; reduce heat. Simmer, covered, for 20 minutes or until liquid is absorbed and vegetables are tender. Serves 4.
