Vegetable Rice Casserole

1 - 5 oz package wild rice
1 large green bell pepper, chopped
1 lb fresh mushrooms, sliced
1 large onion, chopped
1 tbsp cooking oil
1 - 16 oz can tomatoes, drained
1 - 8 oz can tomato sauce
16 oz Cheddar cheese, shredded

Preheat oven to 350. Cook rice using package directions; set aside. Saute green pepper, mushrooms and onion in oil in skillet until tender. Stir in tomatoes and tomato sauce. Layer rice, vegetables and cheese 1/2 at a time in 9x13 inch casserole. Bake for 40 minutes or microwave on Medium for 15 minutes. Works great as stuffing for bell peppers too. Serves 8.
